When the main kraft paper undergoes the process of calendering, the fibers in it align and smooth the surface. Due to this, even at the microscopic level, there remains no area for fat droplets to get absorbed into the paper. 

Interfacial Tension

When two molecules come in direct contact with each other then interfacial tension governs their behavior at the interface (means the surface). The polar cellulose molecules have higher interfacial forces than that of grease. This change in the interfacial forces causes the oil to minimize its contact with cellulose molecules. In simple words, we can say that the oil molecules bead up on the surface of the paper then spread out and be absorbed. 

Lack Of Capillary Action 

Capillary action pulls the liquid into a porous surface. This happens only when the liquid has a good affinity with the material’s surface. As fat molecules do not have a good affinity, the capillary forces are low or absent; they do not move into the paper; this further reinforces the greaseproof nature of baking greaseproof paper.
