What Is Custom Fry Paper?

Customized fry paper is a kind of greaseproof paper that is made from food-grade paper base material to serve fatty food items. Manufacturing Process

Like all the custom food wrapping paper, fry paper sheets for baskets are also made from wood pulp. Lignin is dissolved from the wood pulp using an alkaline process. This results in the production of cellulose fibers that give strength as well as flexibility to the paper. The whole pulp-making process is called the kraft process, which yields high-quality fiber that ultimately leads to the production of excellent-quality paper. 

The resulting paper can be used as greaseproof paper to present highly oily food items. To give the paper perfect grease-resistant ability, the cellulose pulp undergoes mechanical beating. The purpose of beating is to make the pulp swell so that the fiber interlocks perfectly and the surface pores collapse. This dense fiber has less porosity, and primary grease resistance is acquired via fiber sorption (it is the process of liquid absorption on the surface of paper).

Treatment With Internal Sizing Agents 

We want to make sure that each and every aspect of the custom paper we manufacture is of perfect quality and does not create any mess for you. Therefore, we apply sizing that imparts permanent hydrophobicity to the paper. This agent is added directly to the paper pulp in the wet end of the machine. There are two types of chemicals that we use in deep fried paper: 

• Alkyl Ketene Dimer: We apply this chemical due to its ability to react with the hydroxyl group present in cellulose by the formation of a covalent bond. This bonding helps in repulsing water.
• Alkenyl Succinic Anhydride: Alkenyl Succinic Anhydride gives rapid hydrolysis and hydrophobicity to the paper pulp. The best part about this chemical is that it does not impact the friction properties of the paper. 

Treatment With External Or Surface Sizing

After the formation of the sheet, we treat it with surface sizing agents, which are most commonly starch or modified starch, that enhance dry strength and smoothness of french fry paper by filling surface irregularities. Clay and calcium carbonate fillers are also used, which enhance the printability of the paper. 

How Custom Fry Paper Differs from Related Papers

Though the main paper used in the manufacturing of custom printed fry paper is almost the same. However, the manufacturing process and the chemical agents added to the paper pulp at the time of manufacturing create a significant difference in properties such as: 

Wax Paper

The application of wax coating makes the paper highly resistant to moisture and grease; however, due to the heat-sensitive nature of wax, we cannot use it under high temperatures as it can melt at 120 degrees Celsius. Due to this, wax paper is suitable for cold items only. On the other hand, custom fry paper can withstand high-heat applications and is used for prolonged heat exposure, which wax-coated paper cannot. 

Parchment Paper

Parchment paper is manufactured with the treatment of paper pulp with sulphuric acid or zinc chloride that gelatinizes the paper and makes it highly resistant to heat and grease. It is used for en papillote and oven cooking at a temperature of 220–230 °C. In contrast to this, the heat resistance of customized fry paper sheets is lower, but the grease resistance is higher.

Butcher Paper

Butcher paper is a starch, starch-sized sheet that is breathable and allows the penetration of smoke. As it also has quite a good moisture-resistant nature that is why it is used to wrap freshly cut pieces of meat. Conversely, fry wrapping paper is not as breathable as butcher paper is, but its absorptive capacity is good. 

Glassine Paper

Glassine paper has a translucent appearance because it is highly refined and has a very low porosity. Sometimes, the paper is treated with sizing that enhances its functionality. When compared to Fry paper, it is significantly thinner and does not have the heat resistance that the former paper has. 

Physical Appearance And Tactile Identification

The confusing thing about custom papers is that they have similar appearances that make it difficult to distinguish them based on just appearance. However, there are certain textural and physical factors that help in identifying a specific type, such as:

• Finish: It contains a matte or lightly satin coating that sometimes has a slight glossy surface. But if you have selected silicone-coated paper, then it does not have the gloss. 
• Texture: It has a smooth but slightly stiff surface due to the calendaring process. 
• Thickness: This paper has a thickness of 30–60 gsm, which is higher than parchment paper but slightly lighter than heavy-duty butcher paper rolls. 
• Flexibility: When you fold the paper, it gives a “snap” sound because of slight stiffness. This is due to higher fiber beating and sizing.
